Fried Catfish | Baked Salmon | Blackened Trout

Fried Catfish (BACK TO TOP)

Ingredients:

   - 4 Catfish Fillets
   - 3 Cups of Corn meal
   - 1 Cup of Flower
   - 2 Tbsp of Corn Starch
   - 2 Tbsp of Salt
   - 2 Tbsp of Chili Powder
   - 2 Cups of Buttermilk

Directions:

First cut the catfish fillets in half long ways and place in a bowl with the buttermilk. In a large bowl mix the corn meal, flower, corn starch, salt, and chili powder. Next heat up enough oil that will cover the top of the fillets on med-hi heat. Next coat the fish in the corn meal. Cook on each side of the fillet for 4 minutes. Serve with french fries and coleslaw.

 

Baked Salmon (BACK TO TOP)

Ingredients:

   - 2 to 4 Salmon Fillets
   - Salt
   - Chili Powder
   - Lemon Pepper

Directions:

First coat the fillets lightly with the salt, chili powder and lemon pepper. Next pre-heat the oven to 350 degrees and bake for 20 minutes. Serve with asparagus and a salad.

 

Blackened Trout (H/S)(S) (BACK TO TOP)

Ingredients:

   - 2 to 4 Trout Fillets or Salmon
   - Salt
   -  Blackened Seasoning

Directions:

First coat the fillets lightly with the salt, then add the blackened seasoning moderately. The more you use the stronger the flavor will be. Next pre-heat the oven to 350 degrees and bake for 20 minutes. Server with garlic roasted potatoes.
