Ingredients:
- 4 Catfish Fillets Directions: First cut the catfish fillets in half long ways and place in a bowl with the buttermilk. In a large bowl mix the corn meal, flower, corn starch, salt, and chili powder. Next heat up enough oil that will cover the top of the fillets on med-hi heat. Next coat the fish in the corn meal. Cook on each side of the fillet for 4 minutes. Serve with french fries and coleslaw. |
Baked Salmon (BACK TO TOP) |
Ingredients:
- 2 to 4 Salmon Fillets Directions: First coat the fillets lightly with the salt, chili powder and lemon pepper. Next pre-heat the oven to 350 degrees and bake for 20 minutes. Serve with asparagus and a salad. |
Blackened Trout (H/S)(S) (BACK TO TOP) |
Ingredients:
- 2 to 4 Trout Fillets or
Salmon Directions: First coat the fillets lightly with the salt, then add the blackened seasoning moderately. The more you use the stronger the flavor will be. Next pre-heat the oven to 350 degrees and bake for 20 minutes. Server with garlic roasted potatoes. |
